This is a quick delicious and easy-to-make dressing which is good with pretty much everything - coleslaws and salads, roasted vegetables, barbequed seitan/tofu, buddha bowls - you name it! Feel free to adjust proportions and spices to your taste and dish type.
- 1 cup unsweetened soy yoghurt (150 g)
- 4 tbsp tahini
- 1/2 tsp mustard
- 1/2 tsp garlic powder
- 1/2 tsp agave syrup or other liquid sweetener
- 1/2 lemon, juiced
- salt, black pepper
- smoked paprika, chilli powder, chopped herbs optional
- Mix all ingredients except herbs (if using), use spoon and then whisk to incorporate tahini thoroughly. Taste and adjust if needed (salt, lemon juice, spices). When mixed evenly stir in fresh herbs to avoid mashing them too much. Add to salad (can dilute with a bit of water or olive oil if too thick for the salad) or serve with a main dish. Will last up to 5 days in a sealed container.
